I love when Ben goes to the market, for many reasons. Clearly it saves me time after work but it’s also fun to see what he comes home with. Today, he was particularly fond of the blueberries and heirloom tomatoes. Makes sense as we are in the dead of summer in Northern California. They are so rich in color and flavor this time of year, how could anyone pass up on them?!

This is essentially a caprese salad gone astray…but astray doesn’t always have to be a bad thing. The saltiness of the feta combined with the sweetness of the fruits and bright basil…I don’t really miss the mozzarella tonight! Plus, I added some marcona almonds for a little crunch. Who can complain about marcona almonds?!

Anyway…let’s break it down.

Here’s what you need (for two salads, as below):

2-3 medium heirloom tomatoes

1/2 c blueberries

About 2 T basil

2 t feta cheese

2 T chopped marcona almonds

1 T lemon juice

1 T high quality olive oil

Salt and pepper to taste

Here’s what you do:

1. Slice your tomatoes and arrange on some plates.

2. Salt and pepper the tomatoes.

3. Divide the remaining ingredients between the two plates, drizzling a little lemon juice and olive oil over each salad.

Don’t lie, you kinda want to take a picture of this one…so many colors!!!!
