How gorgeous are these purple carrots?! They came in our farm box this week, to my delight! I had just purchased some Grade B Maple Syrup at the Brit + Co. Re:Make Festival so I was especially excited to get these carrots roasting!

These purple carrots aren’t just pretty to look at, their color also means they are also rich in anthocyanins (like blueberries).  Anthocyanins are super antioxidants that help boost your body’s immune system and can even improve your memory and enhance vision.

You can do this recipe with any color of carrot, so don’t think you need to go out and specially buy purple. Orange carrots, of course, are rich in carotenes so you won’t be skimping on the nutrition if you opt for the more accessible variety.

Here’s what you need:

  • 1 T coconut oil
  • 2 T maple syrup
  • 2 t lemon juice
  • sea salt to taste
  • 2 t parsley
  • zest of half a lemon
Here’s what you do:
1. Preheat the oven to 425 degrees.
2. Combine coconut oil, maple syrup, and lemon juice in a small bowl.
3. Place the carrots on a baking sheet lined with parchment paper. You’ll definitely want to line this one as the maple syrup can make a sticky mess in the oven.
4. Coat the carrots with the maple syrup mixture.
5. Roast 15-20 minutes, toss about halfway through.
6. Remove the carrots from the oven and transfer to a serving dish. Sprinkle lemon zest and parsley on top of carrots. So many pretty colors!
