Woah, baby! This salad is delicious…if I may say so myself. The juicy watermelon, fresh mint, rich walnuts, and salty feta are a flavor and texture combination made in heaven! And just as important, this salad is quick and easy but looks like your a food genius.

Here’s what you need:

1 Bunch Kale, chopped into small pieces

1/2 large cucumber

2 cups watermelon, cubed

1.5 T fresh mint

Juice and zest of 1 lemon

1 T olive oil

1/2 cup feta

1/2 cups toasted walnuts

Here’s what you do:

1. Start with the salad dressing. Chop the mint into very small pieces. Combine the olive oil, mint, lemon juice, lemon zest, salt, and pepper. Blend well. Then toss the dressing with the kale.

2. Toss in the rest of the ingredients, or assemble on individual plates (as shown in pictures).

I paired this with an almond crusted salmon with lemon and rosemary…HUGE hit! Such a light, healthy dinner and so easy to do on a weeknight. Delightful!
