This is one of my favorite summer salads since all the ingredients are in season and so fresh this time of year. It also doesn’t hurt that it’s so quick and easy to assemble the salad and make the dressing. This would work with other fresh veggies you may have on hand — bell pepper, carrots, kale, etc. We happened to have a shipment of fresh produce come in through our farm box delivery just two days ago so I used up some of the vegetables from that box.

For the salad dressing, you will just need the following:

1/2 avocado

1 lemon (or lime), juiced and zested

Olive Oil

1-2 T cilantro

1 tsp flat leaf parsley (optional, but I had some on hand so why not?!)

Sea Salt and Pepper to taste

Combine all ingredients in a food processor or blender and voila!

Mix your salad dressing with your lettuce, kale, or other greens. Arrange the sliced veggies around the edges of the plate for a colorful presentation. Here, I used sliced cucumber, avocado, and heirloom tomato. I sprinkled some finishing salt on top – some Fumee de Sel we got from Dean and Deluca. You could also add slivered almonds or nuts for a little crunch.
