Who doesn’t love roasted Brussels sprouts?! This recipe makes preparing this nutrient-dense vegetable easy, without skimping on flavor!

This cruciferous vegetable has key nutrients, including sulfurous compounds, that are key to liver health and detox support. Research shows that sulforaphane can even detox cancer-causing compounds from the body and may even be effective at fighting cancer.[1] Brussels sprouts are also a good source of vitamin C, vitamin K1, folate, manganese, and flavonoids. Hopefully, you don’t need much more convincing to add this vegetable to your diet. They are delicious, after all!

This recipe also calls for apple cider vinegar. Research shows that this amazing and tangy golden liquid may help with fat loss. In a double-blind human study, participants were given vinegar in two different amounts (the placebo group was given added lactate to match the taste) Each group given vinegar lost weight, but the group given the larger dose lost more weight, suggesting a dose-dependent relationship with weight loss. This weight loss continued to increase throughout the duration of the study.[2] ACV can also help with blood sugar control and may be beneficial for improving insulin sensitivity in diabetics.[3]

Dijon Roasted Brussels Sprouts | Paleo, Whole30, Low-Carb

Here’s what you need:

  • 1 pound Brussels sprouts, quartered
  • 1/2 t garlic powder
  • 1/2 t sea salt
  • 2 T dijon mustard
  • 1/2 T ACV
  • 1 T cooking fat (I used avocado oil)

Here’s what you do:

  1. Preheat the oven to 375 degrees.
  2. Place garlic powder, salt, mustard, ACV, and cooking fat in a medium bowl and give it a good mix. Add the Brussels sprouts to the bowl and coat the Brussels sprouts with the mustard mixture.
  3. Spread the Brussels sprouts out on a baking sheet and roast for 18-20 minutes. 
  4. Enjoy the delicious and simple roasted brussels sprouts with One-Pot Pork Tenderloin or this Perfect Roast Chicken.
